Chickpea feta burger

I wouldn't call it a veggie burger because it contains eggs. It is a delicious and healthy option on a hot summer day. I served this with a nice dill tahini sauce.

Ingredients for chickpea feta burger:

200 grams chick peas soaked and boiled with salt
100 grams feta cheese crumbled
2 eggs
1 grated carrot
6 red pearl onions
2 cloves garlic
1/2 cup bread crumbs
1 tbsp oil

Ingredients for dill tahini sauce:
1/4 cup tahini
1/4 cup dill minced
1 tablespoons olive oil
1 clove garlic
1tsp lemon juice
Dash of salt

To assemble:
Hamburger buns
Baby spinach leaves
Tomato slices
Iceberg lettuce leaves

Method fpr sauce:
Combine all ingredients in a food processor until smooth.

Method for burgers:
Heat 1 tablespoon oil in a frying pan over medium heat. Cook pearl onions and garlic for 2 minutes or until soft. Transfer to a food processor. Add chickpeas, carrots feta and eggs and process until combined. Transfer to a bowl. Season with salt and pepper. Add the bread crumbs and mix until combined. Divide mixture into golf ball portions. Shape each portion into a patty.
heat the remaining oil on a non-stick frying pan over medium heat. Cook the patties for 4 minutes each side or until brown and cooked through.
Toast the hamburger buns for 2 minutes each side or until lightly toasted.
Divide half the bun cut side up among serving plates. Spread with a little tahini sauce. Top with a lettuce, spinach, tomato and chickpea patty and other half of bun.

Survived Hurricane Sandy


Looks like I haven't posted anything after Hurricane Sandy.
Never saw such a storm in my life! The scariest sounds of the winds blowing, branches crashing against the glass panes. And not to mention, the bizarre lightning that was a strange greenish blue in color.
Glad to have survived it. Life was difficult for one week.
Even for the animals. I wonder what this squirrel was thinking. Hope it did not lose anyone dear.
Maybe it's looking down at the extent of his damaged house?


The house was cold and dark, and I could not even warm a cup of milk. Having electric stoves in the apartment meant we had to eat cold food and drink cold water. And all the food in the refrigerator started to go bad after a couple of days.


But we were the lucky ones to have no damages to the house, and got the power back after a week, on our first wedding anniversary! I had resigned to the fact that there is no celebration on this special day, but our neighbors were too sweet to throw us a surprise party and made us cut a beautiful cake! They fired up the grill and cooked all the defrosted meat we had. It was like an early thanksgiving feast! So it was truly a day to remember.

A Photo walk on a beautiful Autumn morning

Last weekend, my neighbors were off for their son's wedding, so they asked us to take care of their cats for them while they were away. My husband usually goes over every morning and evening to feed them, but I decided to accompany him last Saturday as it was such a beautiful morning.

The whole place is gearing up for Halloween and the decorations are already going up. I brought my camera along to capture interesting sights along the way.
This one is my personal favorite:

I love the way the leaves change their color during the fall season. Back in India, the trees were mostly evergreen, so this view is quite mesmerizing for me.

 Fall is also the season when mums (chrysanthemums) bloom, and they're all over the place!

 People have started putting out their Halloween and harvest decorations.
 We made sure the cats were fell fed and relaxed.
This is Pepper. He's such a sweet fella. So adorable! And he loves to be cuddled.
Here he is looking at me with those yearning eyes, asking me to  cuddle him.
And this is Snowy. She's the exact opposite. Hates to be cuddled. She'll come over only when she wants to, and she's always very touchy.
