Chicken Malai Kabab


Last year, I had an American couple come over for Christmas dinner. As they were very sensitive to spices, I had to be careful about choosing milder recipes. I used a recipe for chicken malai kabab and omitted the green chillies. They turned out to be a hit, and my guests even took the leftovers home. This was one of the sides to the main course - rack of lamb.
This year, I made this again with the green chillies on the day after Christmas, as it was just the two of us. Looks like this is going to be a regular recipe for the holidays.



Ingredients:
Four pieces chicken breast

1st marination:
Ginger chopped - 1 tsp.
Garlic chopped - 1 tsp.
Malt vinegar - 1 tbsp.
Salt to taste

2nd marination:
Yogurt - 1/2 cup
Cream cheese - 1/2 cup
Heavy cream - 1tbsp.
Egg - 1 no.
Coriander sticks - 2 tbsp., chopped
Green chillies - 1 tbsp., chopped
Green cardomom powder - 1/2 tsp.
White pepper powder - 1/2 tsp.
Cheddar cheese grated - 2 tbsp.
Chat masala - 1 tsp.
Lemon juice - 1 tbsp.

Olive oil for basting

Method:
Cut chicken breast in thin slices 2”x 2”x1/2
Marinate chicken breast in salt, ginger, garlic and malt vinegar. (If you don't have malt vinegar, that's ok - use a little lemon juice)
Refrigerate for 20 minutes.

In a bowl add yogurt, cream cheese, and egg. Mix gently and add coriander, green chilies, cardamom powder and white pepper. Place marination to the side.

Remove the chicken and mix gently with the saved marination and add the cheddar cheese. Place in refrigerator for at least 4 hours or leave it overnight.

Place chicken on a tray in the oven for 350 degrees for 15 minutes and turn over while cooking.
Remove and place on a plate. Sprinkle with chat masala and lemon juice.
Serve with favorite greens and mint chutney.

Note: You can also grill them. Skewer the chicken and grill for 6 minutes. Baste with olive oil and cook until the chicken is crispy.

You can also serve this with jeera rice. I also like to wrap this up in a pita with some chopped cucumber, parsley, hummus and mint chutney.

Egg salad sandwich



This is a quick breakfast recipe. Would take roughly half an hour from start to finish.

Serves: 2 sandwiches

Ingredients:
Whole wheat bread - 4 slices
Eggs -  2
Green onions (spring onions) - 1 stalk, sliced finely. (can substitute with chives, dill or herbs of your choice)
Mayonnaise - 1 tbsp (or Greek yoghurt, I used half of each)
Dijon mustard - 1 tsp
Salt & Pepper to taste

Method:

Immerse the eggs in water and bring it to a boil. Take it off the stove and let sit in the hot water for 8-10 mins. Drain and peel off the shells. Chop the eggs into small chunks.
Add the sliced green onions, mayonnaise, yoghurt, dijon mustard, salt & pepper. Mix it all well. Now you have an egg salad.



Toast the whole wheat bread slices. Spread the egg salad on a slice and close with the other.



Optional add-ons: Fried shallots, bacon bits, crumbled feta, celery, dash of paprika, curry powder, lemon juice, chopped red onions, chopped apples, toasted pecans. The sky is your limit.
I also like to have it as a salad instead of a sandwich, because sometimes I feel the bread makes it too dry.
If you have lettuce leaves you can add a layer of lettuce to your sandwich as well. If you like tomato slices, go ahead! Enjoy!

Vendakka Pachadi - Stir fried Okra in yoghurt sauce


Okra is a vegetable that I would steer clear of as a child. My dad used to say that his mother would prepare okra curry like beef curry during the lent season. And nobody would miss eating meat, coz it has a meaty texture. I never liked the slimy gooey texture, but after being married to someone who loves this vegetable, I had to prepare it to keep him happy. The okra stir fry is one of his favorites and my mother-in-law gave me the easiest recipe for it.
For a change, I tried this pachadi (South Indian gravy made with yoghurt). Its definitely healthy for you.
Okra is high in fibre and also high levels of antioxidants and vitamin A.
The key to making a good okra recipe, is to slice it in thin circles, about 1/4 inch thick, and to sauté it in a wide pan so that it can spread out, stirring regularly, until most of the moisture dries up and its slime free. If the pan is overcrowded, the okra will release a lot of moisture and become a slimy mass.

Ingredients:
Okra - 2 cups, sliced
Red pearl onions - 5, sliced (can use 1/2 red onion as substitute)
Mustard seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
Green chilli - 2 (or to taste)
Turmeric - a pinch (optional)
Oil - 1 tbsp
Plain yoghurt - 1 cup
Water - 1/2 cup
Salt to taste

Method:
Whisk yoghurt with water, salt and roasted cumin seeds in a bowl, and keep aside.
Heat oil in a pan on medium heat. Add mustard seeds and allow it to splutter. Sauté pearl onions and green chillies till they turn brown. Add a pinch of turmeric, if using. Now add sliced okra pieces and fry till okra is cooked to a good crisp (takes about 15 to 20 mins). When done, take it off the heat and allow it to cool.
Dunk the okra mixture into the bowl of whisked yoghurt.
Serve with steamed rice.

Samosa Chaat



My previous post was about Punjabi Samosas. In this one, I'm using the same samosas to make a flavorful Indian snack called Samosa Chaat.

Serving Size: For one plate

Ingredients:

For samosa chaat:
Samosas - 1 or 2
Chana masala - 2 tbsp (recipe below)
Green chutney - 1 tbsp (use coriander chutney/mint chutney/ Coriander-mint chutney)
Date and Tamarind chutney (Sweet chutney)- 1 tbsp
Plain yoghurt - 2 tbsp, whisked with a pinch of salt
Red Onion - chopped, 1 tbsp
Tomato - chopped, 1 tbsp
Cilantro - chopped, a pinch
Chaat masala - a pinch
Black salt - a pinch (optional)
Red chilli powder - a pinch
Fine sev - 1 tbsp

For chana masala:
White chickpeas/garbanzo beans - 1 cup, soaked overnight
Oil - 1 tsp
Cumin seeds - 1 tsp
Asafoetida - a pinch
Red chilli powder - 1 tsp
Turmeric powder - a pinch
Red onion - 1/2 of a medium onion, chopped
Garlic clove - 1
Ginger - 1/2 inch piece
Green chilli - 1 or 2
Tomato - 1, chopped or Tomato paste - 1/4 cup
Amchur (dry mango powder) / Anardana powder (dry pomegranate seeds) - a pinch
Chole masala or garam masala - 1 tsp
Water - 1/2 cup
Salt to taste

Method:

Chana Masala:
This recipe is different from the one I posted earlier. So you could use that one minus the coconut milk, or this one.
Boil the soaked chickpeas in a pressure cooker for about 6 whistles. Drain and keep aside.
Grind garlic, ginger, green chilli and half of the chopped onions into a paste.
Heat oil in a deep pot. Add cumin seeds, asafoetida, red chilli powder, turmeric and temper for 10 seconds. Add the rest of the chopped onions and sauté till it becomes translucent. Then add the ground paste and fry for another 4-5 minutes. Add tomato paste or chopped tomatoes. Sauté till tomatoes are mashed or sauce is boiling. Add cooked chickpeas, amchur/anardana powder, chole masala/garam masala and salt to taste. Add 1/2 a cup of water, cover and cook for 5 minutes.

Samosa Chaat:
Place samosas on a plate and break them a little.

Pour a ladle of the chana masala over it.


Add chopped onions and tomatoes over it. Drizzle yoghurt over it. Drizzle a bit of green chutney and sweet chutney (date and tamarind chutney). Sprinkle a pinch of chaat masala and a pinch of red chilli powder. Also sprinkle black salt, if using.


Garnish with chopped cilantro and fine sev. Yum!

Beetroot Pachadi - Beetroot in Yoghurt sauce


Beetroot Pachadi 
Ingredients:

Beetroot - 2 nos.
Yogurt - 1 cup
Red onion - 1/2, chopped
Ginger - 1 small piece, chopped
Green chillies - 2 or 3 chopped
Mustard seeds - 1/2 tsp
Cumin seeds - 1/4 tsp
Dry red chilli - 2
Curry leaves - 1 sprig
Oil -1 tbsp.
Salt to taste

Method:
Boil the betroots in a saucepan with water. Cook for about 15 minutes or till you are able to stick a fork into it, but is not too mushy. Take it off the heat, drain the hot water, and pour cold water in it. Once it has cooled down, grate the beetroot. Whip yoghurt in a bowl with salt and a little water.
Heat oil in a pan, splutter mustard seeds. Then add cumin seeds, dried red chilies and curry leaves. Then add onions, ginger and green chilies and saute for about 4-5 minutes till the onions soften. Add grated beetroot and saute for a minute or two, Turn off the heat and allow to cool down. Add it to the whipped yogurt and mix.

Kaalan - Plantain and Elephant Yam in a spiced Coconut-Yoghurt sauce

Ingredients:

  • Yam ¼ cup, cut to chunks
  • Plantain 1 small, Skin peeled off and cut to diagonal chunks
  • Yoghurt 4 cups
  • Turmeric powder ½ tsp
  • Black Pepper powder 1 ½ tsp
  • Green Chilly 2 nos
  • Cumin seeds ¼ tsp
  • Grated Coconut 1 cup
  • Fenugreek powder a pinch, roasted
  • Salt as needed
  • Curry leaves
  • Mustard seeds ½ tsp
  • Dry red chilly 2 nos
  • Oil 1 tbsp
  • Ghee 1 tsp
Method:

1. Heat a wide mouth pan at medium heat and add the Yam and Plantain pieces
with a cup of water.
2. Add Turmeric powder and Pepper powder. Allow the Vegetables to cook well and
then add Salt.
3. When the liquid from Vegetables are almost dried up, add 1 tsp. Ghee and mix
well.
4. Mash the veggies gently, reduce flame to low and add the beaten Yoghurt to
this.
5. Throw in Curry leaves and stir well until Yoghurt starts to boil.
6. Meanwhile grind together Coconut, Cumin seeds and green Chilly to a fine paste
with 20ml Water.
7. When the liquid from Yoghurt is completely evaporated (4 cups Yoghurt will get
reduced to almost 2 cups), add the Coconut paste and mix well. Cook for a few
more minutes.
8. Add a pinch of Fenugreek powder and switch off the stove.
9. Heat 1 tsp Oil in another pan and splutter Mustard seeds and dry red Chilly with
some Curry leaves. Pour the tempering.

Moru Kachiyathu

Ingredients:

Buttermilk/whisked yoghurt and water – 1/2 ltr/ 500 ml ( room temperature)
Red pearl onions – 4-5
Ginger – 2 tsp, chopped
Green chili – 3-4
Dried red chili – 2
Turmeric powder – 1/4 – 1/2 tsp
Mustard seeds – 1/4 tsp
Fenugreek seeds – a pinch
Curry leaves - 1 sprig
Salt to taste
Oil - 1 tsp

Method:

Heat oil in a pan & splutter mustard & fenugreek seeds. Add dried red chilies, pearl onions, ginger, green chilies and curry leaves. Fry it for 1-2 minutes. Add turmeric powder & salt. Mix well. Once the onions are brown, pour a quarter cup of water to it. Reduce the heat to low. Slowly add buttermilk and stir while pouring (to prevent curdling). Keep stirring on low heat until the steam just starts to come through. Don't let it boil or the yoghurt would curdle. It will take around 5-7 minutes. After removing it from the stove, stir for a few more minutes.

Notes: It can be refrigerated for 3-4 days. It will start to thicken up when its cooled. It’s important that the buttermilk should be at room temperature, otherwise it may curdle. If you are using full fat yoghurt, add about 1/2 a cup of water and whisk it before adding.
